LIGHT ROAST
A shorter roasting process, ending after the first crack, gives us a thinner-bodied coffee with more acidic flavors. Traditionally, light roast coffees have sweet, fruity notes and hints of florals but never a trace of smokiness. Light roasts remain popular thanks partly to their higher caffeine content and that they retain their chlorogenic acids, making them the "healthier option." The roasting process also allows the coffee to retain more of its original flavors.
MEDIUM ROAST
Our usual daily coffee friend. As a medium roast, this falls into the "second crack" category for roasting and requires a "medium" amount of time to achieve the desired flavor profile. Medium roasts are still of complexity but have a smoother finish than darker roasts and are less acidic than light roasts.
DARK ROAST
The longest roasted of the bunch is known for its low acidity, rich body, and loveable dark flavor profile. Dark roasts will have hints of dark chocolate, smokiness, or even a burnt flavor and possible hints of earthiness and caramel. Roasted well past the "second crack," these beans are perfect for espresso-based beverages.
DECAF ROAST
A regular coffee bean, in which the caffeine is stripped away during the roasting process. The three methods for removal are direct contact, the Swiss water method, and the "natural" method. While coffee can never be "caffeine-free," to be labeled decaf, it must be at 97%, retaining only 3% of the original caffeine content.
